While most people are dreaming about pumpkin spice and all the fall things, I find myself dreaming of tropical islands.
Please don’t get me wrong. I love fall- it may be my most favorite season. Soon, it will have all of my attention.
But if I had it my way, I’ll be cruising to the Caribbean right now. I can feel the salty warm breeze on my face as I relax with a refreshing fruity rum punch in hand. I can hear the steel drums playing in the distance…. Darn this Covid! September cruising has always been the perfect way to say farewell to summer. I miss it terribly! But once this craziness is over, rest assured I will resume my usual September cruising tradition.
This year, my toes aren’t in the water and my a$$ isn’t in the sand, but I will still sip a tasty rum punch while I indulge in a few glorious minutes of an island-time mindset…..far, far away from grading assignments and cleaning toilets. While I’m sipping, I’ll be grateful for my health, for life with my sweety, and for all the good things. Life will return to normalcy one day and for sure, I will appreciate it more than ever!

Easy Keto Rum Punch
8 ounces diet V-8 Splash
1/4 teaspoon Kool-aid Tropical Punch powder (unsweetened)
2 ounces white rum
Ice
Orange slice and cherry for garnish
*Add all ingredients to a shaker. Shake well until chilled. Pour into a glass and garnish.
