If you follow me on Facebook, you know about my horrible experience last weekend. I aged ten years when Smokey disappeared for several hours. I stayed up the entire night looking for him. I was convinced I’d never see him again. Do you realize how hard it is to find a hiding black cat at night? It took an army of friends and family to find and bring Smokey home. Smokey and I now have an understanding. If he ever tries to disappear again, I’ll spank his fur butt. Parenting is tough.
After experiencing all of that, this week had nowhere to go, except up. Here are my favorite fives from this week….
Being Reunited with My Baby
There have been non-stop cat hugs since Saturday. And he can climb on my back and leave claw marks all he wants. I won’t even complain.
Eric’s Birthday
A birthday is always cheerful! We had a great dinner out with friends at Carl and Chelle’s. We shared the pig-picking cake and the Hershey bar cake. You have to splurge on a birthday, right?
Warm Weather
I’m so sick of freezing. Mother Nature had definitely been very hormonal this year. I was glad to be able to stick my feet into the water, although I won’t get too excited. I have a feeling we aren’t done with chilly weather. Hopefully, I won’t still be wearing my winter coat in May.
Yummy Salads
I made a tasty fajita salad this week. I actually had many healthy salads this week! I try to put everything on salad greens. Doing that allows me to chew more which is like getting more bang for your buck calorie-wise. I always make my own fajita mix. It’s super easy and there isn’t nearly as much sodium. Did I mention that I can make it without garlic? This girl HATES garlic. I’ll share that recipe soon, so be on the lookout.
National Amaretto Day
Thursday was National Amaretto Day. You know I try to celebrate everything! Amaretto is a sweet Italian almond flavored liqueur. I honestly don’t think I’ve ever tried Amaretto before. But conveniently, there was a bottle upstairs in the bar. Thanks to Pinterest, I found a tasty Amaretto Sour recipe. I concocted a lower calorie version. You have to love a simple, low calorie treat! And I always save a few calories for a daily treat. There recipe is below. You should totally try it this weekend!
Amaretto Sour
1 ounce of Amarreto
4 ounces of Low Calorie Sweet and Sour Mix (in the cocktail section of the grocery store)
Juice of half an orange
Maraschino cherries
Pour the Amarreto and Sweet and Sour Mix over ice. Squeeze half of an orange into the mixture. Add a few cherries. Enjoy!
