I, Queen of the Egg White Omelette, am not a breakfast person. My stomach churns at the thought of anything except coffee at five in the morning. When I get sick of omelettes, I eat fruit and nuts. So, what do I do when I get sick of both? That’s been the question of the weekend. While perusing Pinterest for inspiration, I found several recipes for crock-pot oatmeal. I’ve never been a fan of oatmeal, unless it’s in desserts. When my husband eats oatmeal, it always looks thick and gooey. Needing to add more grains into my diet, I decided to give it a go. After all, oatmeal has lots of health benefits. I read an interesting article about oatmeal here. Before I went to bed, I threw the ingredients into my cute baby crock-pot, along with a wilted, sad apple. I didn’t have high expectations, given the lackluster ingredients. However, I woke to the house smelling delightfully cinnamon-y. I was a little doubtful because the concoction in the crock-pot wasn’t exactly appealing. After a cautious sample, I deemed it worthy breakfast fare. In fact, it was so warm and tasty, it left me wanting more! I loved the little warm crusty edges. I imagine the oatmeal would be even more tasty with walnuts. Oh, the possibilities!
Crock Pot Apple Cinnamon Oats
Ingredients:
1/2 cup Old Fashioned Oats (I have been wanting to try the steel-cut!)
1 apple, peeled and cubed
1/2 cup unsweetened almond milk (or regular milk)
1/2 cup water
2 T Stevia (or preferred sweetener)
1/2 teas. cinnamon
dash of salt
Raisins, walnuts (optional)
Directions:
Spray the crock-pot with cooking spray. (Very important!)
Throw everything into the crock-pot.
Cook on low for 4 hours.
Reheat leftovers in microwave, if needed.
* This was enough for two breakfasts for myself. *

It is so easy! I also substituted the apple for banana and blueberry. It was yummy, too!
