I have missed blogging. I REALLY (with capital shout-y letters) missed it! When time is scarce, you have to prioritize your life. For the past two weeks, that is exactly what I’ve done. In order to prepare for school and my upcoming nutrition classes, my blog had to be pushed to the side. After all, blogging wasn’t something that was a necessity…so I thought. I have discovered that blogging helps keep me sane. Sanity is highly valued around these parts. Now that I have completed my first full week of a new school year (whew!) and have created a schedule to manage my time, I will be back on the blogging track!
Here are my Favorite Five Friday items…..
1. Shrimp and Tomato Salad.… Earlier this week, I had very limited groceries. I had a few leftover boiled shrimp and a few leftover Rotel tomatoes. I threw them over the lettuce. Because of the juice from the tomatoes, I found that I didn’t need dressing. I would have added a little cilantro and corn if I’d had it. This was a tasty school lunch! 2. Sunday Funday... Since the pool has been completed, my sister’s family, Ashton, and I hang out by the pool on Sunday afternoons. Usually, a few cocktails and a little grilling are involved. What a fun, relaxing way to spend the last day of the weekend! *Note to self- always wear lipstick!*
Please ignore the lack of landscaping. It’s on the to-do list….when it’s cool outside!
3. Wine and Design with My Sister…. I was able to enjoy a little time doing my favorite thing with my favorite sister. We painted the night away as we sipped wine and sampled a few no-so-healthy snacks. Since I am usually the art teacher, it’s fun to be the student once in a while!
4. My New Lilly Items.… A couple of weeks, Lilly Pulitzer had a HUGE online sale. There were many items that were marked 70% off the the original price. I’m always a sucker for a sale! So, of course, I indulged in the opportunity to save money. The necklace was originally $88.00. I purchased it for $19.99. 5. Roasted Cauliflower with an Olive Relish…This was yummy! I served this as a side dish with grilled chicken one night and ate the leftovers for lunch the next day. It was even better on the second day! Note that I was still using the can of leftover Rotel tomatoes!
Cauliflower with Tomato Olive Relish
1 Head of cauliflower, cut into florets
Green pimento-stuffed olives
Preheat oven to 400 degrees.
Spread the cauliflower on the pan.
Drizzle with olive oil.
Flip the cauliflower once as it begins to brown on the edges.
Bake until tender.
Chop, while the the cauliflower is baking, an equal amount of black olives and green olives. (Sorry! I didn’t measure!)
Mix the olives with an equal amount of tomatoes. This recipe is very flexible! You may omit or add more of any ingredient.
Place the relish on top of the cooked cauliflower before serving.
